Fine dining at its best with local ingredients. With the opening of Noma 2.0, René Redzepi has had a goal for the eye: rediscover the Nordic commodities and blow the framework for own knowledge. The year is divided into three seasons. In the winter, the kitchen sees the sea and serves a menu that exclusively caters for seafood. When spring and summer indicate their typical late arrival in June, it means that the menu takes a vegetarian turn. And when the time for vegetables and fruits eventually ends, it’s the wild and forest treasury that takes over.
